Butter is Back! At least according to several reports stating that the negatives of butter have been overstated. In my world I never thought otherwise. When trans- fats – the truly bad fat – became a real issue we made only one change and that was with our frying oil. But the whole industry made that change at the same time so it was easy. We never stopped using butter, though, and we proudly state that Tony’s Off Third bakery uses butter. Butter in the cookies, butter in the scones, butter in many of the specialty cakes, icings, crèmes and curds. A primary ingredient in our delicious lemon curd is… You guessed it, butter. Butter gives a flavor and texture to cooking and like all natural foods can be a good thing in moderation.
