Bayside Profiles: John Everding
Few people have contributed as much over Bayside’s 25-year history as John Everding, who has been a part of the restaurant for nearly 20 of those 25 years. As John, Bayside’s managing partner, says, “The restaurant business is in my blood.” A native of Milwaukee, John grew up in fine dining, watching and learning from his father who ran the beloved Simon House Restaurant for many years.
According to John, his father taught him that the secret to success in the restaurant business is simple: “give your customers good service, food at a good price, and a good drink.” John’s commitment to Bayside and his customers is crystal clear. The next time you’re in the restaurant, keep an eye out for him (he’s easy to spot as usually the tallest in the room!) and introduce yourself. Maybe some of you have memories of your own of the Simon House Restaurant you’d like to share?
Bayside is a special restaurant for many reasons, certainly among them the wonderful team who work hard to make our customers’ experience as enjoyable as possible. Thank you, John, for everything you do!

Chefs Abel and Luis weigh in on some of Bayside’s most popular menu items, and what makes them great!
The Lump Crab and Shrimp Pasta entrée was developed several seasons ago. Menu development is a basic part of our business, and something we enjoy doing. A frequent motivator in creating new recipes is wanting to ensure our customers get their fill of fresh seafood! That has been true for the entirety of Bayside’s existence, and was definitely a factor in this pasta.
Our other priority with this dish was simply to let the fresh shrimp and lump crab be the stars. It starts with a quick sauté of shallots with the shrimp, then a generous addition of fresh herbs, a touch more butter and olive oil, a quick toss with the fettuccine, and finally the lump crab is added. This step is left until last to keep the whole lumps of sweet crab meat intact. A final garnish of Meyer Lemon Oil and it’s ready for the guest’s dining pleasure.
For any of you familiar with Anthony Bourdain’s Kitchen Confidential, you will remember his constant praise of his and every kitchen’s line cooks. It is a true marvel to watch Memo in action in Bayside’s kitchen. Line cook positions are for the young and confident. If you’ve never been in a busy restaurant kitchen on a packed night, let us assure you it’s a sight to see!
